Taco shells made on a tawa from ragi premix — no maida, no corn masa, no deep frying. Cook them like small chillas and fold them while they are still warm.
The fold is the whole recipe
Everything else is a thick chilla. What makes it a taco is folding it at exactly the right moment: warm and pliable, about a minute off the pan. Too soon and it is floppy and will not hold a shape. Too late and it cracks straight down the middle. Aim for the point where it still bends but no longer sags.
Drape, do not press
Lay each warm round over a rolling pin, the rim of an upturned bowl, or the bars of a cooling rack, and leave it. It will set into shape as it cools and firm up further over the next few minutes. Pressing it into a fold with your fingers is what causes the crack.
Ingredients
- 100g Kiro Ragi Premix
- 110ml water
- A pinch of salt
- ¼ tsp cumin powder, optional
- 1 tsp oil, for the tawa
- To fill: rajma or paneer bhurji, salad, yogurt
Method
- Mix the premix with the water into a smooth batter. Add salt, and cumin if using.
- Rest 5 minutes.
- Heat a non-stick tawa on medium and grease it lightly.
- Pour small rounds, 10–12 cm across and a little thicker than a chilla.
- Cook 2 minutes a side, until both sides are firm and the edges start to crisp.
- While still warm and pliable, drape each round over a rolling pin to set the taco shape.
- Leave 2–3 minutes to firm up. They crisp further as they cool.
- Fill with rajma or paneer bhurji, salad and a spoon of yogurt.
Tips
- Thicker than a chilla. A thin round has nothing to hold a fold and will tear.
- Cook them all first, fold as you go. Trying to fold a cold stack at the end does not work.
- Fill at the table. Filled shells soften within minutes; let everyone build their own.
- Cumin is worth it. A quarter teaspoon takes the shell from plain to something that tastes deliberate.
Questions
Are ragi taco shells gluten free? The grains used — ragi, rice and gram — contain no gluten. Check your fillings.
Why do mine crack? They cooled flat before you folded them. Fold within a minute of coming off the pan.
Can I bake them into shape? Yes — drape the cooked rounds over an oven rack and give them 5 minutes at 160°C to firm up.
How many does one pack make? A 300g pack makes twelve to fifteen shells.
