How to Prepare Kiro Ragi Dhokla Premix (No Fermentation)
Ingredients

Kiro Ragi Dhokla Premix – 1 cup (approx. 100–120 g)

Water – ¾ cup (as needed)
-
ENO Fruit Salt – ½ tsp
-
Salt – to taste
-
Oil – for greasing
Optional (for traditional dhokla flavour):
-
Lemon juice – 1 tsp
-
Sugar – ½ tsp
Method

Prepare the Batter
In a bowl, add the ragi premix, salt, lemon juice, and sugar (if using).
Add water gradually and whisk to form a smooth, pourable but thick batter (slightly thicker than idli batter). -
Rest the Batter
Let the batter rest for 5 minutes. -
Add ENO
Just before steaming, add ½ tsp ENO to the batter.
Mix gently once in one direction.
Batter will become light and airy. -
Steam the Dhokla
Grease a flat plate or dhokla tray.
Pour batter evenly and steam in a preheated steamer for 12–15 minutes on medium heat. -
Check & Cool
Insert a toothpick—if it comes out clean, dhokla is ready.
Let it cool slightly, then cut into pieces.
Optional Tempering (Traditional Style)
Heat 1 tsp oil, add:

Mustard seeds – ½ tsp

Curry leaves – few
-
Green chillies – optional
Pour over steamed dhokla and garnish with coriander.
Serving Suggestion
Serve with green chutney or sweet tamarind chutney.
Tips (Good for consumer education)

Do not overmix after adding ENO.

Always steam immediately after ENO is added.

For extra softness, add 1 tbsp curd (optional).
