Ragi Pancakes — Eggless, No Maida, Ready in 10 Minutes

Soft ragi pancakes with no egg, no maida and no baking powder, on the plate in about ten minutes. Saturday morning, without the sugar crash that follows a stack of white-flour pancakes.

Why these stay soft

Ragi on its own makes a heavy, slightly gritty pancake. The premix already balances the finger millet with rice flour and gram flour, so the batter has enough structure to hold air and enough softness to avoid the hockey-puck problem. You do not need egg for binding and you do not need baking powder for lift — a five-minute rest does most of the work.

Milk or water?

Both work. Milk gives a softer, richer pancake and browns a little faster; water gives a lighter one that tastes more of the millet. If you are cooking for children, use milk.

Ingredients

  • 100g Kiro Ragi Premix
  • 110ml milk or water
  • A pinch of salt
  • 1–2 tsp jaggery powder or honey, optional
  • ¼ tsp cinnamon, optional
  • 1 tsp ghee or butter, for cooking

Method

  1. Whisk the premix with the milk or water until completely smooth.
  2. Add salt, plus jaggery and cinnamon if you want them lightly sweet.
  3. Rest 5 minutes. The batter thickens slightly as the flour hydrates.
  4. Heat a non-stick pan on medium-low and grease with ghee.
  5. Pour small rounds about 10 cm across. Do not spread them — pancakes should stay thick.
  6. Cover and cook 2–3 minutes, until the surface looks set and the edges are dry.
  7. Flip and cook 1–2 minutes more until golden.
  8. Stack and serve with banana, honey or nut butter.

Tips

  • Keep the flame low. Ragi browns faster than wheat. A hot pan colours the outside before the middle cooks.
  • Do not spread the batter. Pour and leave it. Spreading gives you a chilla, not a pancake.
  • Cover the pan for the first side. It traps steam and sets the top without needing a risky early flip.
  • Sweeten last. Add jaggery after tasting the batter — ragi is mildly sweet on its own.

Questions

Can I make ragi pancakes without egg? Yes — this recipe has none. The premix binds on its own.

Do I need baking powder or Eno? Not for pancakes. Rest the batter five minutes and cover the pan; that is enough. Eno belongs in the idli and dhokla versions.

Can I make them savoury? Leave out the jaggery and cinnamon, add chopped onion and green chilli, and you have something closer to a thick uttapam.

How many does one pack make? A 300g pack makes nine to twelve pancakes.
