One mix. Eight dishes. Foxtail millet, ready to cook.

Kangani (foxtail millet) is a light, quick-cooking grain that Indian kitchens used long before rice took over the breakfast plate. This 300g pouch turns it into eight familiar dishes with nothing more than water — dosa, idli, dhokla, chilla, bread, cake, pizza and waffles. No soaking. No grinding. No overnight fermenting.

Each 300g pouch makes 8–10 dosas or chillas, 10–12 idlis, or 8–10 dhoklas.

Three ingredients: kangani flour, rice flour and besan. No maida, no preservatives, no added sugar, no added oil. At 15 mg sodium per 100 g it is the lowest-sodium mix Kiro makes, with 3.80 g fibre per 100 g.

How to cook it

Dosa / Chilla: Whisk the premix with water into a thin, pourable batter. Rest 10 minutes. Pour onto a hot tawa and spread thin. Cook until the edges crisp and lift.

Idli: Mix with water and a little curd into a thick batter. Rest 15 minutes, fold in a pinch of Eno, pour into greased moulds and steam 10–12 minutes.

Dhokla: Mix with water and curd, add Eno just before steaming, pour onto a greased plate and steam 12–15 minutes until a toothpick comes out clean. Temper with mustard seeds and curry leaves.

The same batter also makes uttapam-style pancakes, waffles, a tawa pizza base, and soft bread and cake.

Energy 372 kcal, protein 12.10 g, carbohydrate 77.30 g, total sugars 1.0 g, total fat 1.63 g (saturated 0.80 g, trans 0 g), sodium 15 mg and dietary fibre 3.80 g. A 30 g serve gives about 112 kcal and 3.6 g protein.

At 15 mg of sodium per 100 g it is the lowest-sodium mix Kiro makes, and at 3.80 g of fibre per 100 g the highest in fibre.

What can I make with it?

Eight dishes from one pouch: dosa, idli, dhokla, chilla, bread, cake, pizza and waffles. One 300 g pouch makes 8 to 10 dosas or chillas, 10 to 12 idlis, or 8 to 10 dhoklas.

How do I make dosa or chilla?

Is it gluten-free?

Kangani, rice and besan are all naturally gluten-free, and there is no wheat or maida in the mix. It is made in a facility that may also process other grains, so if you have coeliac disease, please check with your doctor before eating it.

How is it different from Kiro Ragi Premix?

Same three-ingredient idea, different millet. Kangani Premix has 15 mg sodium per 100 g against 118 mg in Ragi Premix, 3.80 g fibre, and 12.1 g protein against Ragi's 13.1 g. It makes eight dishes, including bread, cake and waffles.
