Ragi dosa usually means soaking ragi, rice and urad dal overnight, grinding them, then waiting for the batter to ferment. This version skips all of it. Ragi goes by many names — nachni in Marathi, kezhvaragu in Tamil, ragulu in Telugu, finger millet in English — so this is also an instant nachni dosa or finger millet dosa. Same grain, same method.
Ingredients (makes 3 dosas)
- 100g Kiro Ragi Premix
- 100ml water
- 50ml curd
- A pinch of salt
- ½ tsp oil or ghee per dosa
For a vegan dosa, use plant-based yoghurt instead of curd. Cooking for more people? One 300g pouch makes 8–10 dosas.
How to make instant ragi dosa
- Mix the batter. Whisk 100g premix with 100ml water and 50ml curd until smooth, with no lumps. Add a pinch of salt.
- Rest it. Leave the batter for 10 minutes so the flours absorb the liquid. If you like a tangier dosa, cover it and let it ferment for 4–6 hours instead.
- Heat the tawa. Heat an iron or non-stick tawa on medium-high. Sprinkle a few drops of water: if they sizzle away at once, it's ready. Wipe it with a little oil.
- Spread. Pour a ladleful into the centre and spread it outwards in a spiral with the back of the ladle, into a thin circle.
- Crisp. Drizzle ½ tsp oil or ghee around the edges and over the top. Cook for about 2 minutes, until the underside is golden and the edges lift away from the tawa.
- Fold and serve. Fold the dosa and serve it at once with coconut chutney and sambar.
Tips for a crisp ragi dosa
- Heat is everything. A tawa that's too cool makes the dosa stick and tear. If it's so hot that the batter sets before you can spread it, sprinkle a little water to cool it, wipe, and try again.
- Spread fast, spread thin. Ragi has no gluten, so thin is what makes it crisp. A thick ragi dosa turns soft.
- Too thick to spread? Whisk in a spoonful of water at a time.
- Stir between dosas. The flours settle, so give the batter a stir before each ladleful.
Ways to serve it
- Masala ragi dosa: spoon potato-onion bhaji onto the dosa before you fold it.
- Podi dosa: sprinkle idli podi and a little ghee over the top while it crisps.
- Onion ragi dosa: scatter finely chopped onion, green chilli and coriander over the batter as soon as it's spread.

Ragi dosa questions
Do I have to ferment the batter? No. Ten minutes' rest is enough. Fermenting for 4–6 hours is optional and only makes it tangier.
Why does my ragi dosa break when I fold it? It's usually undercooked or spread too thick. Give it another 30 seconds, until the edges lift on their own.
Can I make it without curd? Yes, with plant-based yoghurt in the same quantity.
